We wrapped up the end of last year by celebrating our first Christmas together as husband and wife. I’m still waiting for my Christmas present.  You might remember the wall-mounted hooks that desperately needed replacing.  Mike has promised to re-create my “perfect solution”.  I already brought the knobs.  I’m just waiting for the assembly.

As Mike is figuring out the assembly,  I’m learning to be more resourceful since we’re trying to “save”.  It’s a work in progress especially since I get easily distracted by pretty things.  Mike might even refer to them as pretty pricey things but learning will take time.  I am extremely patient.

Pinterest has been an amazing help! It has taught me to be resourceful while maintaining the pretty.  I baked three different types of cookies for Christmas (all recipes were found on pinterest) and packaged everything with candy bags (extras from the wedding) and poms (directions were found on pinterest)

my newest purchase…. Williams-Sonoma’s Brownie Bite Pan

the pros… every bite is perfectly proportioned and every piece has four corners. I can’t wait to make more bite size bake goods.  perhaps i can try bite size cupcakes.

the con… it’s incredibly hard to take out the brownie. where can I find a small offset spatula?

our apartment is still cluttered by boxes. as soon as we empty one box, ten more seem to appear. the good news …. i’m almost completely moved out of my old home and moved into my new home.

mike’s favorite addition: the television

my favorite addition: the dining table

i love it! i really wanted this dining set and now it’s finally ours! i assembled the table (almost by myself). mike had to help me with the lifting and with the tightening of the screws but other than that …. i did it all by myself!  i’m just happy to have a table that actually fits in our dining room.  i kept walking into our temporary dining set.  i think it destroyed all my toes.

on a side note, if you haven’t already heard, our Aunt Mimi makes the best pickles! They’re the kind of pickles that you’ll fight for.  They’re seriously delicious!

needless to say, i quickly incorporated it into our dinner.

and the husband loves it!   so delicious! Thanks Auntie Mimi!

unfortunately, I don’t have the right pan to recreate these poffertjies at home but i did find an ebelskiver pan at williams and sonoma. I was hoping that ebelskivers and poffertjies were the same little pancakes with different names. I was wrong. Poffertjies are Dutch pancakes and Ebelskievers are Danish pancakes.  Ebelskievers are bigger and you can add any filling you want.  You can add banana slices, peanut butter, or rasberries.  We’re going to try nutella.  Some say they’re better than Poffertjies.

My Ebelskiver experiment:

This was definitely more complicated than making dan go jais.  i was supposed to beat the egg whites until stiff but not dry peaks form.  what does that even mean?  I’m not sure what I ended up doing but i think it worked.

the search for a poffertjie pan begins today. Ebelskivers are fun to make but they’re no poffertjies.

this was one of my favorite parts.  i loved using the egg separator.

i used the williams-sonoma egg waffle mix.  it’s not a match to the dan go jais from mosco street but it’s still delicious.  i think it’s the nutmeg.  we’ll continue to try different recipes until we recapture the dan go jais from mosco street.  today was devoted to learning how to effectively use the egg waffle pan.  i’ve learned that it’s better to let the batter overflow than to put too little. also, medium heat is too high for the pan (williams-sonoma suggests medium heat but i needed to adjust it to avoid burning the dan go jais)

on a side note, don’t throw away your egg cartons.  you can use it for future projects with your kids. more on that later.

the kitchen is probably the most complete room in our apartment and thus the first stop in the tour of our apartment. it’s also my favorite room in our apartment. as you can see, there’s a lot to play with.

we still need to put up blinds. apparently, you can see right into our kitchen. the aprons are our temporary source of cover.  i’m not sure it works but they are pretty. i wear them all the time even when i’m not doing anything but i’m super scared that i’m going to get them dirty when i’m cooking.  they’re just too pretty.  i’m currently looking for a hook to hang my aprons in the kitchen. i’m leaning towards the owl hook from anthropologie.  i’m planning on collecting even more aprons. it’ll be fun!

this is my favorite part! i haven’t had the opportunity to use any of it but i will. mike made me take it off our registry about three times. i’m so glad we decided to keep it on the registry. i love it! he’s going to learn to love it as well.

we’re so grateful for all the pictures everyone posted.  mike and I are trying to re-live every moment. thanks for making our day so memorable! here are some of our favorite pictures from our wedding. i’ll try to post more pictures later.
