Ebelskiver

Mike and I fell in love with these little Dutch pancakes called “Poffertjes” when we were in Aruba. They’re delicious!

unfortunately, I don’t have the right pan to recreate these poffertjies at home but i did find an ebelskiver pan at williams and sonoma. I was hoping that ebelskivers and poffertjies were the same little pancakes with different names. I was wrong. Poffertjies are Dutch pancakes and Ebelskievers are Danish pancakes.  Ebelskievers are bigger and you can add any filling you want.  You can add banana slices, peanut butter, or rasberries.  We’re going to try nutella.  Some say they’re better than Poffertjies.

My Ebelskiver experiment:

This was definitely more complicated than making dan go jais.  i was supposed to beat the egg whites until stiff but not dry peaks form.  what does that even mean?  I’m not sure what I ended up doing but i think it worked.

the search for a poffertjie pan begins today. Ebelskivers are fun to make but they’re no poffertjies.
